Dave's Light and Fluffy Madeleines

Ingredients

  • 60g icing sugar
  • 60g plain flour
  • 1/4 teaspoon baking powder
  • 1 egg
  • 40g Melted Butter

Optional flavours

  • 1/4 Teaspoon Lemon Zest
  • 1/4 Teaspoon Vanilla Extract
  • lemon curd
  • Orange Extract

Dave's Light and Fluffy Madeleines

These are beautifully fluffy and light.

Instructions

Melt the butter in a pan on a medium heat

Put egg and flavourings in a bowl, beat with an electric mixer on high speed for 5 minutes


Gradually beat in the icing sugar

Beat for 5 to 7 minutes or until thick and satiny


Sift together the flour and baking powder

Sift the quarter of the flour mixture over the egg mixture, gently fold in

Pour quarter of the melted butter into the egg mixture, gently fold in

Repeat both steps again

Repeat both steps again

Repeat both steps for what is remaining

Store batter in fridge for 20 to 40 minutes.

Ready to cook

Preheat the oven to 200C/400F/Gas 6. 

Brush the madeleine tray with melted butter then lightly coat in a little flour.

Spoon batter into the prepared moulds, filling 3/4 full

Bake in the preheated oven for 10 minutes or until the edges are golden and the tops spring back


Cool in moulds on a rack for 1 minute.  Loosen with a knife.  Invert onto a rack and cool

Sift icing sugar over the tops or melt plain chocolate and dip the tips in the chocolate
