Ingredients
- 4 lemons + zest and juice
- 3 eggs + 1 yolk
- 200g sugar or less depending how sweet you like
- 100g unsalted butter

A very easy recipe for tarts ,spreads or just on toast
Instructions
In a pan add the eggs, sugar and lemon juice on very low heat.
Once combined and sugar has dissolved turn heat up just a little
Add the butter and zest stirring all the time
Once thick sieve and leave to cool.
Put into hot sterilized jars and seal
